Abstract
Lay Summary This study investigated the impact of transportation distance and vibration isolation during transportation of beef sirloin on subprimal and case-ready steak quality including color, moisture loss, and tenderness. This experiment compared the quality of sirloins transported for 240 or 640 km as well as sirloins transported 640 km on a regular pallet or a vibration isolating aluminum pallet that reduces road vibration. The data from this study indicate that increased transportation distance improves subprimal color and reduces moisture loss in case-ready steaks. Additionally, the use of a regular pallet improved subprimal tenderness compared to the vibration isolation pallet. This study indicates that increased exposure to roadway vibrations may be beneficial to beef quality.
