Abstract
Bu çalışmada iki yıl (1987 ve 1988) ve beş değişik çevrede yetiştirilen bazı ekmeklik buğday çeşitlerinin kalitesi üzerine çeşit ve çevrenin etkileri araştırılmıştır. Toplam 80 örnek analiz edilmiştir. İstatistiksel olarak önemli bulunan sonuçlara göre (P<0.01); buğdayın kalite kriterleri, çeşit, çevre ve yıl tarafından önemli ölçüde etkilenmektedir. Camsı tane, 1000 tane ağırlığı, su adsorpsiyonu, uzama mukavemeti ve enerji üzerine çeşidin etkisi çevreden daha fazladır. Daha çok çevreden etkilenen kriterler ise kül miktarı, gelişme müddeti, uzama kabiliyeti, ekmek ağırlığı, ekmek hacmi ve ekmek değer sayısıdır.
