Abstract
Les conditions de la préfiltration sur kieselghur jouent un rôle important sur le débit et la qualité de la filtration finisseuse sur plaques. Pour obtenir une très bonne rétention des microorganismes, la filtration sur plaques clarifiantes doit être effectuée sous une pression ne dépassant pas 0,5 bar. Avec les plaques stérilisantes, bien que la pression ait peu d'influence que la qualité de la filtration, il n'est pas souhaitable de travailler à des pressions supérieures à 0,5 bar ; au-dessus, l'augmentation de rendement est faible et au niveau plaque-support les fuites de vin sont importantes. Les plaques clarifiantes et stérilisantes sans amiante sont moins performantes que les plaques avec amiante. Des suspensions de levures et de bactéries dans des solutions hydroalcooliques peuvent être utilisées pour comparer les plaques filtrantes. +++ The conditions of prefiltration with Kieselghur have a great importance on yield and quality of close filtration with plates. To have a correct removal of microorganisms, filtration with clarifying sheets must be conducted using a pressure lower than 0,5 bar. With sterilizing sheets it is the same because, with higher values, the increase of yield is low and wine leaks are important. Asbest sheets are better than clarifying and sterilizing sheets without asbest. To compare efficiency of filtering sheets yeasts and bacteria suspensions in hydroalcoholiz solutions can be used.
