Abstract
Bu araştırmada piyasada satılan sirkelerin Sağlık ve Gıda Maddeleri Tüzüğü’ne uygunluğu yönünden araştırılması amacı ile değişik işletme ürünü 13 sirke örneği alınarak çeşitli yönlerden analiz edilmiştir. Araştırmaya alınan örneklerden 3’ü bulunması gereken %4 genel asidi ihtiva etmediğinden ve %1’in üzerinde alkol bulunduğundan, 3’ü %4 genel asidi ihtiva etmediğinden ve litrede 10 g’dan az kurumadde bulunduğundan, 1’i de %4’ün altında genel asit ihtiva ettiğinden Gıda Maddeleri Tüzüğü gereğince satılmaması gereken sirkeler grubuna girmektedir. Oksidasyon sayısı yönünden ise 1 örnek şüpheli görülmüştür. Araştırmaya alınan 13 örnek içerisinde her bakımdan uygun 6 örnek saptanmıştır.
