Abstract
Gıdaların gerek perakende gerekse toplu tüketim için servise sunulması işlemleri günümüzde giderek gelişen bir sanayii haline gelmiştir. Dilimizde de ketering olarak yerleşmeye başlayan bu terim, tüm tüketime sunma faaliyetlerini içermekte ve gıda teknolojisi bilim dalı içinde; tedarik, hazırlama, servise sunma gibi son tüketim işlemlerini kapsamaktadır. Çok doğaldır ki tüm bu işlemlerin yapıldığı, şarküteri, mutfak, kantin, restoran ve kafeterya gibi mekanlar ile kullanılan araç-gereç ve ekipmanlar yine aynı kavram içinde yer almaktadır. Ayrıca birçok gıda işleme ve koruma yöntemleri de yine sistem içinde uygulanmaktadır. Tüm bu değerlendirmelerden de anlaşılacağı gibi ketering bir gıda teknolojisi dalıdır. Ancak bu endüstri kolu, geleneksel gıda endüstrisinden faklı olarak, bir öğünde yer alan ve değişik tekniklerle işlenmiş gıda ürünlerini veya menü elemanlarını, bir arada tekrar hazırlayıp son tüketime sunar. Oldukça karmaşık ve çok disiplinli olan bu sistemin; Gıda ve ketering makina ve teçhizat üreticileri, gıda endüstrisi, gıda muhafaza ve dağıtım organizasyonları ile yakınen ilişkileri bulunmaktadır.
