Abstract
La centrifugation est une technique surtout appliquée en préclarification sur des vins assez troubles, pour faciliter les opérations de collage et augmenter la longueur des cycles de filtration. Elle est aussi utilisée pour débourber rapidement et efficacement les moûts ainsi que pour « délevurer » les vins en fin de fermentation, afin d'accroître leur stabilité pendant la conservation.
