Abstract
Türkiye’nin farklı bölgelerinden toplanan yoğurt örneklerinden 81 adet Lactobacillus suşu izole edilmiştir. İdentifikasyon testleri sonucu, 73 adet Lactobacillus bulgaricus suşu teşhis edilmiştir. İdentifiye edilen suşların yüzde asitliği 0.64-2.34, proteolitik aktiviteleri 0.007-1.273 mg tirosin/ml, asetaldehit üretimleri de 1.95-12.59 mg/ml arasında tespit edilmiştir. Ayrıca suşların inhibisyon etkileri Escherichia coli, Staphylococcus aureus koagulaz (+) ve (-) test bakterileri üzerinde araştırılmıştır. Suşların test bakterileri üzerinde sıra ile yarı çapı 3.2-19 mm 3.2-17 mm ve 3-19.2 mm’lik inhibisyon zonları oluşturduğu belirlenmiştir.
