Abstract
Bu araştırmada, 2 farklı organ etinin (Dil ve Böbrek), 3 değişik yağ sıcaklığında (5 oC, 11 oC ve 18 oC) oluşturduğu emülsiyonların çeşitli özellikleri model sistemde araştırılmıştır. Oluşturulan emülsiyonların; emülsiyon kapasitesi (EK), emülsiyon viskozitesi (EV), emülsiyondan ayrılan su oranı (ES1), emülsiyondan ayrılan yağ oranı (ES2), emülsiyon stabilitesi (ES3) ve emülsiyon pH değerleri tespit edilmiştir. Denemeler %2.5 NaCl ve %0.5 K2HPO4 seviyesinde gerçekleştirilmiştir. EK üzerine et çeşidinin istatistiki olarak çok önemli (p<0.01) etkiye sahip olduğu görülmüştür. Her üç yağ sıcaklığında da genel olarak böbrek eti, dil etine göre daha yüksek EK göstermiştir. Dil eti her üç yağ sıcaklığında stabil emülsiyon oluştururken, böbrek et stabil emülsiyon oluşturamamıştır. Dil ve böbrek etlerinin oluşturdukları emülsiyonların EV değerleri arasında bir fark bulunmamıştır.
