Abstract
Bu araştırmada değişik köylerden getirilip Van’dan satışa sunulan Kurutlardan 20 örnek alınmış ve bunların fiziksel, kimyasal ve mikrobiyolojik analizleri yapılmıştır. Kimyasal analiz sonuçlarına göre ortalama değerler şöyledir. Kurumadde %85.51, su %14.48, yağ %8.52, protein %54.64, kül %14.89, tuz %12.18, yağsız kurumadde %77.00 ve Laktik asit cinsinden titrasyon asitliği %1.18’dir. Mikrobiyolojik analiz sonuçlarına göre, ortalama total bakteri sayısı 1.40x104 adet/g, maya-küf sayısı 1.40x103 adet/g, lipolitik mikroorganizma sayısı 1.40x103 adet/g şeklinde bulunmuştur. Analize tabi tutulan Kurut örneklerinde koliform grubu mikroorganizmaya rastlanmamıştır.
