Abstract
Les auteurs ont étudié la microflore fermentaire et oxydative du sol et des moûts de raisin dans différents terroirs du vignoble nantais. Ils montrent que, si la microflore est homogène d'un point de vue qualitatif et quantitatif à l'intérieur d'un terroir donné, elle présente par contre une certaine hétérogénéité entre terroir différents. Ils confirment le rôle du sulfitage sur la microflore des moûts de raisin. +++ The authors studied fermentative and oxydative micro-organisms of soil and of grape musts in different soils of the Nantes region. They showed that if the micro-organisms are quantitatively and qualitatively homogenous with a given type of soil, to the contrary there exists a certain heterogeneity among the micro-organisms of different soils. The authors confirm the role of sulphiting on the micro-organisms of grape-musts.
