Abstract
Protein-su interaksiyonu gıda sistemlerinin dehidrasyon, rehidrasyon, çözünebilme, belirli bir viskoziteye sahip olma, jelleşme, ısıya karşı stabilite gösterme gibi özellikleri açısından önemli bir oluşumdur. Proteinlerle su arasındaki interaksiyonlar esas olarak protein molekülündeki polar amino asit bölgelerinde meydana gelmektedir. Protein içeren gıda sistemlerinde su tiplerinin tanımlanması için strüktürel, tek katmanlı, dondurulamayan, hidrofobik hidrasyon, çok katmanlı, imbisyon ya da kapilar ve hidrodinamik hidrasyon suyu terimleri kullanılmaktadır. Protein-su interaksiyonlarını etkileyen faktörler protein molekülündeki su bağlanan bölgelerin sayı ve niteliği, pH değeri, sıcaklık derecesi, iyonlar ve diğer faktörleri içine almaktadır. Süt proteinlerinin su ile olan interaksiyonları ısıtma, asit ya da enzimle pıhtılaştırma, koyulaştırma, kurutma, dondurulma gibi işlemler sonucu elde edilen çeşitli süt ürünlerinin fiziksel, kimyasal ve işlevsel özelliklerinde etkili olmaktadır.
