Abstract
Flavonoid yapısındaki acılık etmenlerinin yanısıra turunçgillerde bulunan diğer bir acılık etmeni de Limonindir. Limonin turunçgil meyvelerindeki triterpenoid metabolizmasının ara ürünlerinden olan bir limonoiddir. Yapılan araştırmalar bu maddenin limon ve altıntoplarla Washington Navel, Valencia ve yafa portakallarının kabuklarında, çekirdeklerinde ve bu meyvelerden elde edilen meyve sularında değişik miktarlarda bulunduğunu göstermiştir.
