Abstract
Sütün yağsız kurumadde derişimine bağlı olarak, rennet ile pıhtılaşma ve rennetleme süresi ölçümleri gerçekleştirilmiştir. Pıhtılaşma ve rennetleme süreleri derişimin bir fonksiyonu olarak incelenmiştir. Ayrıca viskozite ile yukarıda anılan süreler arasındaki ve bu iki sürenin birbirleri ile olan ilişkileri yine derişime bağlı olarak denenmiştir. %2-14 yağsız kurumadde içeriğindeki rekonstitüe örneklerde diğer koşullar değişmeksizin ve kontrol altında tutularak ölçümler gerçekleştirilmiştir. Sonuçta sütün yağsız kurumade (SYKm) derişiminin artması ile sürelerin de artma eğilimi gösterdiği ve ilişkinin doğrusal olduğu (r= 0.95-1.00) ortaya konulmuştur.
