Abstract
Bu çalışmada hıyarlarda bulunan pektin metilesteraz enziminin (PME) işleme açısından önemli olabilecek bazı nitelikleri belirlenmiştir. Buna göre hıyar PME enziminin 60°C ve daha düşük sıcaklıklarda ısıya oldukça dirençli olduğu, hatta 55 °C'de aktive olduğu, buna karşın 80° ve 90 °C'lerde hızla inaktive olduğu belirlenmiştir. Ayrıca PME enziminin optimum sıcaklığı 60°C, optimum pH'sı ise 9.0 olarak belirlenmiştir.
