Abstract
Araştırmada, inek, koyun sütleri ile bunların birbirleri ile yapılan %25, %50 ve %75 oranlarındaki karışımlarına uygulanan farklı ısıl işlemlerin, bu sütlerin peynir mayası ile pıhtılaşma yetenekleri üzerine etkisi incelenmiştir. Altı kısma ayrılan süt örneklerinden birincisi kontrol örneği olarak ayrılmış, diğerleri ise, sırasıyla 65 oC/30 d., 68 oC/10 d., 72 oC/20 sn., 75 oC/20 sn. ve 80 oC/20 sn.’lik ısıl işlemlere tabi tutulmuştur. Isıl işleme tabi tutulan sütler tekrar altı kısma ayrılarak, bunların herbirine sırasıyla %0.00, %0.02, %0.03, %0.04 ve %0.05 düzeyinde CaCl2 ilave edilerek pıhtılaşma süreleri saptanmıştır. Bütün örneklerde, 72 oC/20 sn., 75 oC/20 sn. ve 80 oC/20 sn.’lik ısıl işlemlerin sütlerin pıhtılaşma sürelerinde belirgin uzamalara neden olduğu belirlenmiştir. 65 oC/30 d. ile 68 oC/10 d.’lık ısıl işlemlerin etkisi ise çok belirgin olmamıştır. Isıl işlem görmüş sütlere CaCl2 ilavesi pıhtılaşma sürelerinin kısalmasına neden olmuştur.
