Abstract
Süperkritik akışkan ekstraksiyonu, biyolojik materyallere ve gıda maddelerine uygulanan yeni bir tekniktir. Bu teknik, gaz özelliğine benzer davranış gösteren belirli sıvıların çözme özelliklerinden yararlanılarak, gıda ve ilaç sanayiinde önemli maddelerin elde edilmesinde ayrıca, çözücü ve safsızlıkların uzaklaştırılması işlemlerinde alternatif olarak kullanılabilecek yeni bir tekniktir. Bu derlemede, süperkritik akışkanların temel özellikleri ve SC ekstraksiyon gıda uygulamaları sunulmuştur.
