Abstract
Gıda endüstrisinde üretimin düzenli kontrol altında olması için, üretim esnasında gıda ürünlerinin hızlı analizi çok önemlidir. Son çalışmalar, hızlı kalite kontrol metodolojileri geliştirmek için Fourier Transform Infrared (FTIR) spektroskopi kullanılması doğrultusundadır ve FTIR teknolojisi gıda endüstrisi için kantitatif bir kalite kontrol aracı olarak önemli potansiyele sahiptir. FTIR analizi metotları kullanışlı, hızlı ve otomatiktir. ATR (Attenuated Total Reflectance) teknolojisi ile birleştiğinde örnek hazırlama işlemini önemli ölçüde kolaylaştırmaktadır. Bu makalede FTIR spektroskopinin temel prensiplerine, FTIR için örnek hazırlama ve uygulama tekniklerine ve gıda analizlerinde FTIR spektroskopinin bazı kullanım alanlarına değinilmektedir.
