Abstract
L'omble chevalier (Salvelinus alpinus L.) est un salmonidé d'eau froide. Ses caractéristiques physiologiques et biologiques étant différentes de celles des autres poissons de la même famille, les pratiques d'élevage ne sont pas identiques. Les principaux travaux concernant
son élevage en eau douce sont présentés, de la fécondation à la production de poissons adultes à des fins de commercialisation.
