Abstract
Aflatoksinler toksik, kanserojenik ve mutajenik aktiviteye sahip olup, gıda ve yem maddelerinin aflatoksinlerle kontaminasyonu önemli sağlık sorunlarına ve ekonomik kayıplara neden olmaktadır. Yapılan akut ve toksisite testlerine göre aflatoksin M1 (AFM1)’in en az aflatoksin B1 (AFB1) kadar toksik olduğu, kanserojenik ve mutajenik potansiyelinin ise AFB1’den daha düşük olduğu belirtilmektedir. İnsan beslenmesinde önemli bir yeri olan süt ve süt ürünlerinin AFM1 ile kontamine olması önemli bir sağlık riski oluşturmaktadır. Sütün yeni doğmuş ve gelişme çağındaki çocuklar gibi zayıf immunolojik sisteme sahip olan kişiler tarafından yoğun bir şekilde tüketildiği düşünüldüğünde tehlikenin boyutları büyümektedir. Bu nedenle pek çok ülkede süt ve süt ürünlerinde maksimum miktarda bulunabilecek AFM1 miktarı yasal olarak belirlenmiştir. Bu derlemede, dünyada ve ülkemizde süt ve süt ürünlerinde bulunan AFM1 miktarları ve ülkemizde üretilen süt ve süt ürünlerinin AFM1 açısından risk potansiyeli tartışılmıştır. Bebek beslenmesinde önemli bir yeri olan anne sütünde, AFM1 riskinin bulunup bulunmadığı da bu konu kapsamında ele alınmıştır.
