Abstract
Besin alerjisi, besinlerin bileşenlerine (özellikle proteinler) ve onların sindirim ürünlerine karşı gelişen anormal immünolojik reaksiyonlardır. Bu terim sadece belirtileri immünolojik mekanizmaya göre açıklarken kullanılır. Besin alerjenleri, molekül ağırlıkları 10000-40000 olan glikoproteinler olarak belirlenmiştir. Bu moleküller genellikle proteazlara, ısı ve diğer denatürasyon etkenlere karşı dayanıklıdırlar.
