Abstract
Konaklama sektöründe kapasite konusu konaklama hizmetlerinde oda/yatak sayısı üzerinden yiyecek-içecek hizmetlerinde ise sandalye/kuver/masa sayısı verileri üzerinden irdelenmekte ancak zaman açısından bir yaklaşımın olmadığı görülmektedir. Oysaki bir hizmet işletmesi olarak emek-yoğun ve üretim ile tüketimin eşzamanlılık özellikleri de olan konaklama işletmelerinde, ürünün bizzat kendisi olan zaman unsurunun kapasite açısından da irdelenmesi gerekmektedir. Konaklama işletmesi yöneticileri, işletme amaçlarına ulaşabilmek için zamana stratejik bir bakış açısı ile yaklaşmalı ve gerçekleştirilen faaliyetlerin verimlilik, maliyetler, kapasite kullanımı gibi hesaplamalarında klasik yöntemler dışındaki stratejik yöntem ve teknikleri de uygulamalıdır. Bu çalışmada, konaklama işletmelerinde zaman eksenli fiili kapasite hesaplamasının nasıl yapılacağını gösteren ve misafir başına harcanan ortalama faaliyetzaman kapasite bilgisini sağlayan formüller ve zaman denklemleri önerilmektedir. Konaklama işletmesi yöneticileri, önerilen formüller ve zaman denklemleri yoluyla zaman-faaliyet planlamaları, işgören planlaması ve maliyet ölçümlemesi gibi noktalarda alacağı kararları destekleyen zaman eksenli stratejik bir kapasite bilgisi elde edebilir. Capacity subject in the accommodation sector is being scrutinized through the number of rooms-beds for accommodation services and the number of chairs, couvert or tables in food and beverage services but there seems to be no approach in terms of time. In accommodation establishments that are service establishments having labor-intensive and synchronicity of production and consumption characteristics. The time, which is a product itself, should be examined in terms of capacity as well. Accommodation establishment managers should approach to the time with a strategic perspective and apply strategic methods and techniques in the calculation of efficiency, costs, capacity utilization of performed activities other than classical methods and techniques to achieve business objectives. In this study, formulas and time equations which shows how to measure the time-based actual capacity and average activity-time capacity data per guest in accommodation establishments are presented. Accommodation establishment managers shall obtain a strategic knowledge of actual capacity data supporting the decisions to be taken in the form of time-activity planning, employee planning and cost measurement through proposed formulas and time equations.
