Abstract
Ha querido usted que yo le haga un estudio de la alimentación que reciben los individuos confiadas al cuidado del Instituto Nacional de Ciegos, del que es usted director y fomentador diligente. Empapado de la delicadeza de esta misión, he demorado el estudio más de lo que usted y yo hubiéramos querido, mas era preciso allegar el mayor número de datos a fin de tener a la vista todos los elementos que demanda la fisiología, para determinar la ración alimenticia del individuo, situado en las condiciones en que se encuentran los que usted me ha encargado de estudiar. Con este objeto dividí mi trabajo en las siguientes partes: I. Estudio cualitivo del material alimenticio. II. Estudio cuantitativo del mismo, para determinar la cantidad de energía que es capaz de desarrollar al ser desintegrado por el organismo, y, III. El control de los resultados obtenidos, mediante el estudio del equilibrio ponderal del individuo y el análisis de algunas materias eliminadas.
