Abstract
A presente resenha apresenta o livro Cozinhando a tradição: Festa, cultura, história e turismo no litoral paranaense, de Maria Henriqueta Sperandio Garcia Gimenes-Minasse, publicado em 2013 pela Editora UFPR. A obra apresenta a história do Barreado, prato tradicional do litoral do Paraná, as transformações que aconteceram no preparo e no consumo e sua relação com o desenvolvimento econômico e turístico da região, que se vê representada na sua preparação culinária.
Barreado Dossier - This review presents the book Cooking tradition: Party, culture, history and tourism in the coast of Paraná, of Henrietta Maria Garcia Sperandio Gimenes-Minasse, published in 2013 by UFPR Press. The book presents the history of Barreado, traditional dish of the coast of Paraná, the changes in its preparation and consumption and its relation to economic development and tourism in the region represented in its culinary preparation.
