Abstract
Japon
toplumu yeni ihtiyaçlar ve teknolojiler karşısında geleneksel kullanımların
tecrübesinden faydalanarak yeni çözümlere ulaşmıştır. Amerikan tarzı hızlı
yemek alışkanlıklarının Japon toplumunu etkilemeye başlamasıyla birlikte
ihtiyaç ve taleplere göre geleneksel alışkanlıklar biçimlenerek Batı tarzı fast
food’un geleneksel Japon mutfağı ile sentezi “teppanyaki” tarzı pişirme
doğmuştur. Bu pişirme tarzının temelinde geleneksel kullanımı; Japon tarzı
kömür mangalı “hibachi” vardır. Bu çalışma; Batı’nın Doğu alışkanlıkları
üzerinde etkisini gösterdiği günümüzde, bu etkileşimin senteze dönüştüğü, Japon
kültüründen bir örnek olarak “teppanyaki” incelenmiştir.
