Abstract
O leite contaminado por resíduos de antimicrobianos é considerado adulterado e impróprio para o consumo, representando riscos à saúde do consumidor, riscos tecnológicos para a indústria de laticínios e rejeição da imagem da empresa pelo consumidor. Com os objetivos de determinar a freqüência da contaminação por resíduos de antimicrobianos no leite pasteurizado dos tipos "C" e "Integral Fazenda" comercializado na região Norte do Estado do Rio de Janeiro foram analisadas 300 amostras de leite pasteurizado tipo "C" (130 amostras) e "Integral Fazenda" (170 amostras) oriundas dessa região, de abril de 1996 a abril de 1997. Foi encontrada uma freqüência de 4.33% de contaminação por resíduos de inibidores microbianos no leite, utilizando-se, paralelamente, o método de inibição microbiana "Delvotest P" e o de proteínas ligadoras de penicilinas "bL Snap Test". A utilização isolada do "Delvotest P" revelou uma ocorrência de 3,66 % e do "bL Snap Test" uma freqüência de 1,66%. Para as amostras "Delvotest P" positiva e "bL Snap Test" negativa, foram utilizados testes para detectar tetraciclinas ("Tetraciclina Snap Test") e gentamicina ("Cite Probe Gentamicin"). Conclui-se que houve contaminação no leite de consumo, por vários tipos de antimicrobianos, na Região Norte do Estado do Rio de Janeiro.
Milk contamination by antimicrobial residues occurs by profilactic or therapeutic use of such agents in the treatment of mastitis and other diseases in lactating cows, through supplementary diets in catttle feeding and from fradulent use in milk preservation. Milk contaminated by antimicrobial residues is considered adulterated and inappropriate for human consumption, since it represents a health risk for consumers, a threat to the dairy industry and causes a negative image for the contaminated products. Milk contamination is also recognized as a critical indicator of infection and a lack of microbiological quality and the possible presence of pathogenic microorganisms in milk. The objective of this research was to determine the frequency of contamination with antimicrobial residues in pasteurized type "C" and "Integral" milk commercialized in the northern region of Rio de Janeiro State, Brazil.. 300 samples of pasteurized type "C" milk (130 samples) and "Integral" milk (170 samples) from the northern region of Rio de Janeiro State were analysed using two rapid tests between April 1996 and April 1997.
