Abstract
Se revisan diversos aspectos del hierro: datos epidemiológicos y fisiológicos recientes, factores que regulan su absorción y que aumentan o reducen su biodisponibilidad; se evalúa el contenido y porcentaje de biodisponibilidad del hierro de diferentes alimentos y productos a través de tablas comparativas. Se destaca la importancia y la razón de un adecuado suplemento y la elección apropiada de fuentes alimentarias.
