El proceso administrativo se ha convertido en un área de intervención en el desarrollo organizacional del mundo posmoderno. El sector restaurantero no ha estado alejado. En estudios realizados en los restaurantes de comida típica en la provincia de Los Ríos se ha observado en los procesos de gestión de estos restaurantes una inadecuada coordinación en el área administrativa en relación a la planificación de funciones del personal administrativo.  Una planificación limitante de la pertinencia socio empresarial la cual constituye el problema de investigación. El objetivo del trabajo se centra en establecer la dinámica del proceso administrativo en los restaurantes de comida típica en la Provincia de Los Ríos. Los métodos empleados en el trabajo incluyen: el orden teórico inductivo, deductivo, análisis síntesis e histórico lógico. Además, se emplean los métodos estadísticos-matemáticos, observación de actividades desarrolladas en los restaurantes, revisión de documentos y el sistémico estructural para la dinámica del proceso administrativo de restaurantes de comida típica. Se realizó un diagnóstico de la situación actual de los restaurantes en base al análisis de la matriz FODA y se aplicó la instrumentación de estrategias para los restaurantes de comida típica en la Provincia de Los Ríos. Los principales resultados obtenidos incluyen: el direccionamiento estratégico de la empresa a partir de la misión, visión, valores, slogan corporativo y se logra una estructura organizacional a partir de la instrumentación de un manual de funciones para los restaurantes investigados. IMPROVEMENT OF ADMINISTRATIVE PROCESSES FOR TRADITIONAL FOOD RESTAURANTS IN THE PROVINCE OF LOS RÍOS ABSTRACT The administrative process has become an area of intervention in the organizational development of the postmodern world. The restaurant sector has not been an exception. In studies conducted in traditional food restaurants in the province of Los Rios it has been observed that in the management processes of these restaurants there is an inadequate coordination in the administrative area in relation to the planning of administrative staff functions. There is limiting planning of the socio-business relevance which constitutes the research problem in this investigation. The objective of this work focuses on establishing the dynamics of the administrative process in the restaurants of traditional food in the Province of Los Ríos. The methods used in the work include: the inductive, deductive theoretical order, synthesis and logical historical analysis. In addition, statistical-mathematical methods, observation of activities developed in restaurants, document review and structural system for the administrative process dynamics of traditional food restaurants are used. A diagnosis of the current situation of the restaurants was made based on the analysis of the SWOT matrix and the implementation of strategies for the restaurants of traditional food in the Province of Los Ríos was applied. The main results obtained include: the strategic direction of the company based on the mission, vision, values, corporate slogan and an organizational structure achieved through the implementation of a manual of functions for the restaurants under investigation.
